Pork Shogayaki – Gingery Pork



Carole's Chatter: Pork Shogayaki – Gingery Pork


This is a simple and quick Japanese dish – not too many ingredients.  There is a bit of prep required.

Ingredients:

Pork fillet
Fresh ginger
Soy sauce
Sake
Mirin
Oil (vegetable)

Method:

Pop your pork fillet into the freezer for a at least a couple of hours before slicing it thinly.  It  will have stiffened a bit and will be much easier to slice.

Grate your ginger – about 2 tablespoons will do.

Get your pan really hot and then flash fry the pork so that it is browned on both sides.  It is important that the frying takes no more than a minute – otherwise you'll get really tough pork.

Add the ginger plus equal quantities of the soy sauce and sake and a bit more mirin – I used 2 tablespoons of soy and sake and 3 of mirin.

And that's it.  Served with rice it is a flavoursome unfussy dish.
